ClarkClan Granola

I have been making granola for years. I remember eating granola my mother made when I was growing up. I have tried many variations of granola, this is the one I keep going back to again and again. This is the basic recipe that my mother made, with modifications. My mother has modified it and then I have taken it and modified it even more for our family tastes. It is an extremely versatile recipe.

ClarkClan Granola

8 cups or 1 small box Old Fashioned Oats

1/2 cup wheat germ, and/or 1/2 cup sunflower seeds (optional)

1/2 cup dried milk

1 cup All-Bran cereal, ( Fiber One cereal is the same thing)

1 small pkg coconut

1 cup nuts, almonds, pecans, walnuts (your choice)

Combine the above ingredients and toast in large baking pan at 350 degrees for 20 minutes. Stir after 10 minutes.

Combine in saucepan

1/2 cup oil (your choice really, my standard is coconut oil)

1/2 cup brown sugar

1/4 cup water

2 teaspoons cinnamon

Heat over low heat until brown sugar (and coconut oil, if using) dissolves, then add 2 teaspoons vanilla.

Toss sugar mixture with oat mixture.

Bake 15 minutes stirring every 5 minutes.

When cool add in dried fruit if desired. I love craisins and dates.

Store tightly covered.

Since this makes a fairly large batch, I tend to divide it and freeze half. We eat this with milk in the morning. I add it to my yogurt and some frozen fruit to make parfaits. We put it in baggies and eat it dry, as a snack,. Enjoy!

I am going to try this recipe! We love granole - but it is sooo expensive to purchase from the store!
